Kob with Grilled Salad | Atkins


These posts have become more than a weekly Atkins recipe for me. I find I'm sharing more than a collection of ingredients - it has become a little journal post for me. Yes, the scale has moved down this week (barely, but still, down) - but perhaps, more importantly to me - is why.

I am an emotional eater - and by 'eating', I don't mean turning to piles of apples and lettuce. My emotional state has a direct impact on my eating habits (and results) for the week. A little mind-set change, mood-boosting fish and a fresh, zingy grilled salad - instant mood booster.


Serves 4
Ingredients :
2 large kob fillets (or any other sustainable, firm white-fleshed fish)
1/2 fresh pineapple - peeled, cored and cut into rounds
1/2 red onion, peeled and sliced into rounds
2 large handfuls baby spinach, rinsed
100g sweetcorn, drained
1 large red chilli, finely chopped, seeds removed
1/2 English cucumber, sliced
small handful fresh basil
salt and pepper to season

For the dressing:
Balsamic vinegar
Olive oil
Lemon juice

Method:

Season the fish with salt and pepper - and cook to your liking. If you can brave the weather, this is the perfect time for a quick braai - the smell of charcoal will do wonders for your winter mood.

If not, place on a rack in the oven and grill until done, turning over half-way through. While the grill (or braai) is on, grill the pineapple briefly on both sides, until it has a little colour.

The salad is a simple 'construction' - place all remaining ingredients in a bowl along with the pineapple, toss with the dressing.

Serve along side the fish.



 Should you need a little 'comfort food' - few things satisfy more than a steaming plate of pasta - smothered in a cream sauce - it's still an option. Atkins' range of pasta (Penne or Fusilli) have 70% less carbs than normal ranges. I still don't know how they do it - my best guess so far is that it's made from magic and wonder. You can already guess what next week's recipe is going to be, I'm sure.
